Recipe: Vaghareli Rotli

Vaghareli Rotli (Tempered Chapattis) is a dish originating from Gujarat, that gives new life to the extra rotlis (chapattis) you have made the day before. This is definitely a great way to fight food waste, as it is quick and easy but also extremely tasty!
I always remember my grandma and mum make this atleast once every 3 weeks, a proper useful staple!
The ingredients you will find are most likely already in your cupboard and therefore there is no need to worry that you will have to go shopping and search for a ridiculous amount of ingredients ahah!
Vaghareli Rotli comes from the word "Vaghar" which means tempering of spices in hot oil or ghee. You could also use this same recipe but with leftover rice.

Ingredients:
Oil
1 tsp Fenugreek Seeds
1 tsp Asafoetida Powder
2 Onions (sliced in half moons)
Shredded Stale Chapattis
1 tbsp Garlic Paste
1 tbsp Green Chilli Paste
1 tsp Salt
1.5 tsp Turmeric Powder
2 Cups Yoghurt
1 Cup Water
Coriander
Method:
Warm Oil in non stick, deep pan.
Once the oil is hot, add Fenugreek Seeds and Asafoetida and mix.
Add the onions. Stir and cook until golden brown.
Add the shredded chapattis, garlic paste, green chilli past, salt, turmeric and mix.
Add yoghurt and water to the pot, and stir. Cook on medium heat, until it has become slightly thicker.
Add coriander and mix.
Garnish with further coriander and enjoy piping hot with a side of Mango Pickle or Poppadoms!
