Pistachio Barfi Recipe!

Ingredients:
- 350g White Granulated Sugar
- 550ml water
- 100g ghee
- 150g pistachio cream
- 800g full fat milk powder
- pinch of saffron
- 2tsp ground cardamom
- 1 tsp ground nutmeg
- 1tsp salt (balances sweetness)
- 200g ground pistachios
Method:
1. Take a large stockpot and add sugar, water, ghee and pistachio cream.
2. Bring the mixture to a boil and allow to simmer for 5 minutes after continuously stirring.
3. Turn heat right down to low, and add full fat milk powder, saffron, cardamom, nutmeg and salt.
4. Mix it all together over a low heat for 8 minutes, it will start to thicken and look rough. Continue stirring, and it will become a smooth mixture.
5. Once it’s thick and smooth, add ground pistachios and mix over a low heat for a further 4 minutes to ensure it’s all distributed evenly.
6. Have a lined baking tray at hand, and transfer the mixture straight into it, pressing down and evenly spreading quickly whilst it is hot.
7. Allow it to set at room temperature between 3-4 hours.
8. To decorate, warm the pistachio cream, so it becomes pouring consistency but not too runny. Spread all across the Barfi evenly!
9. Top with editable rose petals and ground mixed nuts.
10. Allow it to set in the fridge minimum of an hour. Then remove from the fridge slice into cubes and enjoy! ☺️
